When it comes to cold winter nights, the best meals, are hearty comfort foods that are just plain cozy. Macaroni and cheese (or mac’n’cheese as I like to call it) is 100% in that category! I’ve been making this delightful recipe for years, and it’s certainly time to share the wealth! Save this recipe for a cold night… bonus points if it’s raining. Add a blanket and then pop this bad boy in the oven. I promise you won’t be disappointed!

It’s pretty easy to make, in all it’s cheesy delightfulness. The real treat though, is the crumbly crust that really takes it to the next level! If you don’t want to eat your mac’n’cheese on it’s own, roasted broccoli, green beans, or steamed kale with a little lemon dressing are great options!

225g macaroni

50g butter, divided

3 cloves garlic, minced

3 eggs

1 can evaporated milk

1/2 teaspoon salt

1/4 teaspoon cayenne pepper or paprika

1 1/2 cups (120 grams) shredded Cheddar Cheese, grated

1/2 cup (50 grams) shredded Smoked Applewood Cheese, grated

1/2 cup (30 grams) grated Parmesan Cheese, grated

3 slices of bread, cut into small square pieces

1. Preheat the oven to 175 C. Line a baking tray with tin foil, and lay out the bread pieces. Melt half the butter on low heat, and drizzle over your bread, then place in the oven and bake for about 7 minutes. until crispy. Set aside. Raise the temperature of the oven to 240 C.

2. Meanwhile, bring a large pot of water to boil, and add the macaroni and cook for 7-8 minutes.  Drain the macaroni and set aside.

3. In the same pot, melt the remaining butter, and then add the garlic. Cook until fragrant, about 1-2 minutes. Remove from heat, pour the macaroni back in and mix until the butter and garlic are evenly spread. Set aside.

4. In a large bowl, whisk together the eggs and evaporated milk. Mix in the salt, cayenne pepper and cheeses. Pour the mixture on top of the macaroni and mix well.

5. Transfer the mixture to an 8- or 9-inch baking dish, using a spoon to spread it out evenly. Sprinkle the bread crumbs evenly across the top. Bake on the bottom of the oven for 12 minutes, until the crumble is golden brown and the sauce at the edges bubbles slightly.

6. Let stand for about 10 minutes, and then serve!

It takes no time at all to make, and is great to make when you’re not in the mood or don’t know what to make! Mr. Actually makes his own version of mac’n’cheese but it’s a little different. Either way, mac’n’cheese is one of our favorite comfort foods!

    It’s amazing just how much the crust serves to elevate mac and cheese isn’t it?!
